Greeks traditionaly marinate small fishes, as sardines or anchovies, as fresh fish was not available to most Greek people all year.
Sardines and anchovies were the main type of fish preserved, and they were either consumed as an accompaniment to beans or vegetables, or as a meze.
We dress our marinated anchovies with extra virgin olive oil, fresh basil and some garlic.
