Pickled wild purslane
Summer purslane (Portulaca oleracea) is a tasty weed loaded with nutrients. It is an annual succulent growing wild under the Greek sun. Greeks call it "andrakla" or "glistrida" and use the leaves and stems raw in tomato salads. It is also sometimes cooked with other summer greens and added to pies.
Pickled purslane can be added to salads, chopped in yogurt for a delicious Tzatziki variant, or as a side to appetizers, grilled fish or just perfect with cheese platters.
Be bold: add some pickled purslane to stir fried vegetables.
