Simple pickled cucumbers
Cultivated for at least 3,000 years, the cucumber originated from India. It was probably introduced to other parts of Europe by the Greeks or Romans. As cucumber and squash plants are extremely prolific in Paros, we decided to pickle part of our produce.
Sliced cucumbers are brined in a sweet, salty and spicy brine with a slightly asian taste, different than what you find elsewhere.
Try it with rice noodle salads, alongside cheese and grilled meets, on steamed fish.
Be bold: make a tempura batter and deep fry them.
