Vine leaves in brine


Grape leaves from our spray free small vineyard in Isterni, are harvested when tender, thoroughly cleaned and washed and then rolled for brine preservation.

The leaves are commonly used in the cuisines of a number of cultures, rolled or stuffed with mixtures of meat and rice to produce "dolma" - "dolmades". Another word for these stuffed vine leaves is "sarma".

Make your own dolmades or cut into smaller pieces as a savory addition to soups with greens and cabbage.

Be bold: try it wrapping sardines or in combination with lemon in a variant of Greek "fricassee" casserole bakes involving meat or vegetables.
